April 22nd is Earth Day! There are so many events that Earth Day Network is sponsoring around the globe. This particular campaign is Environmental & Climate Literacy! See below for what they stand for this year & always. Also read more about the organization HERE & the countdown to 2020.

Definitely need this these days with the EPA & other organizations under attack right now!

Healthy Vanilla Cinnamon Ginger Protein Cookies and Healthy Chocolate Protein cookies:

Vanilla Cinnamon Ginger is the base batter – Ingredients & directions below:

Ingredients for Vanilla Cinnamon Ginger Batter

2 Scoops Vanilla Protein Powder – use vegan or a Casein/Whey powder. I used Casein Whey Met-Rx Protein Plus

1 cup oat bran

4-5 tablespoons quick oats

1 teaspoon NuNaturals Oat Fiber

1-3 teaspoons of either cinnamon or pumpkin spice – to your own taste – I like more

3/4 teaspoons of baking powder

1-2 tablespoons of NuNaturals Sugar Free Vanilla Ginger Syrup to taste. You can use just their  Sugar Free Vanilla Syrup instead if ginger is not your thing OR just their Simple Syrup.

1 small banana

1/2 cup natural applesauce

5-6 tablespoons liquid egg whites

Pinch of salt if needed. I did not use any.

OTHER THOUGHTS – Feel free to  use your own spice blend & top with nuts or coconut or any other yummy goodie!

**PLEASE NOTE I KEPT HALF OF THIS BATTER TO MAKE MY HEALTHY CHOCOLATE PROTEIN COOKIES BELOW**

For the chocolate version:

Use the existing batter above and add 3-4 teaspoons of NuNaturals Dutch Processed Cocoa Powder PLUS 1-2 teaspoons of the NuNaturals Vanilla Syrup to taste as well as thickness of batter. I also topped the chocolate ones with some mini chocolate morsels & pieces of organic coconut.

Bake per the directions below.

Directions

Preheat oven to 350 degrees. In a bowl, mix together the protein powder, oat bran, oat fiber, cinnamon or spice of choice and baking powder.

With a blender or in a small food processor or Magic Bullet blend together the banana, salt, egg whites, vanilla ginger syrup or syrup of choice and applesauce.  If you don’t have any of the previous, you can just mash the banana and mix everything but I there may be bana bits & pieces. I actually don’t mind that but some do.

Add this liquid mixture to the dry and mix well.

Portion out into equal balls of dough and press flat onto a cookie sheet with parchment or silicone liner. I did not press that flt because I like a softer cookie. Do what you like but adjust the baking time of you make a flatter cookie.

Bake for about 15-18 minutes and remove from oven.

Eat warm or cool.

MY NOTES – Even after cooling, I heated up at 3-4 reduced power in my microwave too so you can enjoy warm or cook even after they have already been stored. Feel free to top with a nut butter or cream cheese icing. Eat for breakfast too because they are made with great breakfast ingredients!!!! AND I PLATED MINE WITH THE NuNaturals Sugar Free Cocoa Syrup if you want to dunk your cookies in that too!
