Frittata - Eggs are GREAT for Protein
Eggs are a fantastic source of protein & nutrients! I have written about them in the past HERE and HERE. Also, here is info from World's Healthiest Foods.

Don't reserve this great frittata from World's Healthiest Foods website for breakfast; it's wonderful for lunch or dinner as well! Zucchini and tomatoes provide excellent sources of health-promoting vitamins A and C as well as manganese to your Healthiest Way of Eating. And all of this for only 85 calories!
Prep and Cook Time: 25 minutes
Ingredients:
- 2 whole eggs
- 4 egg whites
- pinch of turmeric
- 1/2 medium onion, chopped fine
- 1 TBS chicken or vegetable broth
- 3 medium cloves garlic, chopped
- 2 cups thinly sliced zucchini
- 1/2 4 oz can diced green chili
- 1 small tomato, chopped with excess pulp removed
- 2 TBS chopped cilantro
- salt and black pepper to taste
Directions:
- Chop onions and garlic and let sit for at least 5 minutes to enhance their health-promoting properties.
- Beat together eggs, egg whites, turmeric, and a pinch of salt and pepper. Set aside.
- Heat 1 TBS broth in 10-12 inch stainless steel skillet. Healthy Sauté onion, garlic, zucchini, and green chili for about 3 minutes stirring frequently.
- After 3 minutes, add tomato, cilantro, salt, and pepper to zucchini mixture.
- Pour egg mixture over vegetables. Turn heat to low and cover. Cook for about 10 minutes checking periodically to see if eggs are firm. When done, run a rubber spatula around edge of frittata, cut into four wedges and serve.

I'm very weird (like you didn't know that), but as much as I love eggs, I don't really care for omelets, frittatas, and such. Not even huevos rancheros! But the pictures sure make it look good.

I have to agree with Cammy -- I love eggs but no longer care about omelets or frittatas. I almost always put hard-boiled eggs in my nearly daily salads, and we have breakfast eggs once or twice a week -- I used to make them easy-over, but to avoid extra fat, I now poach them. I love eggs benedict, but only have it a couple of times a year. Also, I love a breakfast baked custard consisting of a couple of TBSP of bran, 1 egg, 1/3 cup milk, a little sweetener, and a dash of nutmeg. Yum.

I make cowboy eggs where I scramble eggs and add in tomatoes, green peppers, and onions. A fast version but healthy too.

I actually made some similar egg muffins this week! We had ham, at my teen's request, and it seemed a good use of some leftovers. I use egg substitute in mine because of my cholesterol issues.

I love eggs! I have some form of them pretty much every day, whether it is just the whites or the whole eggs. They are in my 1-minute muffing, the protein pancakes. Plus I love omelets and egg salad.
I am also a firm believer that dietary cholesterol is not a bad thing and I need to do a post about that research.

Yum-o. Just pondering what I could use as a substitute for zucchini that my whole family would eat. (The husband and son are very picky eaters!)

Eggs kind of gross me out on their own, but those cup things look pretty good. On a weird note, it appears my husband has become allergic to eggs (if he eats a couple on their own, not if they're part of a recipe). He gets a wicked stomach ache...

Another egg fan here! (Does that make us egg heads?)
I tend to eat mostly carton egg whites scrambled with a bit of pecorino cheese--not that yolks aren't awesome too, but I get to eat a HUGE-ass serving of whites for the same calories as a small serving of the real thing. Have 'em with my green smoothie in the morning, or else I'd add vegetables.
Hooray for women getting protein! Too many skimp on it.
