OK, one more thing, I saw this take on 10-minute Peanut bars at World's Healthiest Foods. Interesting, EASY to make & you can change it up to suit your taste buds. Me, not a sesame fan so I would change that!
10-Minute Peanut Bars - Enjoy this great energy boosting snack as part of your Healthiest Way of Eating. And it only takes 10 minutes to prepare. Nutritional stats HERE.
Prep and Cook Time: 10 minutes
Makes 12 bars
Ingredients:
- 1 cup raw or roasted peanuts
- 1 TBS minced fresh ginger
- 2 TBS sesame seeds
- 1 cup raisins
- 2 TBS honey
Directions:
- Grind all ingredients, except for the honey, in a food processor until fairly fine but still having some texture (you don't want it to have the consistency of peanut butter).
- Add honey and process just long enough for it to blend in.
- Press into a square about 3/4-inch thick on a plate or square pan and refrigerate for about an hour or more.
- Cut into 2-inch squares








hmmm I wonder what would happen if I left out the ginger?

Oh, Jody, these sound too sinful. So glad I don't have the ingredients at home. These would be just the types of things I would be stashing at work.

One of my faves, and I don't do it that often, is to fill a brownie pan with peanut butter, cover it with a thin layer of brown sugar and put it in the freezer. 24 hours later, you can cut it into frozen squares and there you have it -- a qucik, sweet, (almost fairly healthy) snack. Jody, I have a friend who always saw something beautiful in everyone! I think that seeing some specific thing that is beautiful about ourselves is a more realistic and achievable goal than "I am beautiful," which I think too often sets us up for failure.

LOL - Pixie has no concept at all of the mirror. We actually call her Hedonism Cat because she relishes the stretch and lolling about.
I bet you could use almond flour instead of the peanuts. Then you wouldn't have to grind. Must try!

Those peanut bars sound wonderful! Yet I sense with those ingredients I'd have portion control issues. I could see scarfing a whole day's worth of calories before breakfast if I got too near a batch of 'em. Love sweet peanutty things too much!
