Healthier Tiramisu; Cocoa-Nut Bananas

I saw these yummy recipes in an email from my Fitness Magazine online newsletter. Easy & wanted to share!
1. If you're a fan of the classic Italian dessert Tiramisu, try this quick, lower-calorie variation the next time you need a dessert in a hurry. Both types of ladyfingers--spongy and crunchy--work well.
Servings: 6 servings
Prep: 15 mins
Total: 45 mins
Ingredients:
1/2 cup nonfat ricotta cheese, (4 ounces)
2 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
12 ladyfingers, (about 1 3/4 ounces)
4 tablespoons brewed espresso, or strong coffee, divided
2 tablespoons bittersweet chocolate chips, melted (see Tip)
Directions:
1. Combine ricotta, sugar, vanilla and cinnamon in a medium bowl.
2. Place 6 ladyfingers in a 9-by-5-inch (or similar size) loaf pan. Drizzle with 2 tablespoons espresso (or coffee). Spread the ricotta mixture over the ladyfingers. Place another layer of ladyfingers over the ricotta and drizzle with the remaining 2 tablespoons espresso (or coffee). Drizzle with melted chocolate. Refrigerate until the chocolate is set, about 30 minutes.
Tip:
Tip: To melt chocolate: Microwave on Medium for 1 minute. Stir, then continue microwaving on Medium in 20-second intervals until melted, stirring after each interval. Or place in the top of a double boiler over hot, but not boiling, water. Stir until melted.

2. "Cocoa-Nut" Bananas:

Prep: 10 mins
Total: 10 mins
Ingredients:
4 teaspoons cocoa powder
4 teaspoons toasted unsweetened coconut
2 small bananas, sliced on the bias
Directions:
1. Place cocoa and coconut on separate plates. Roll each banana slice in the cocoa, shake off the excess, then dip in the coconut.

I am not a tiramisu fan, but we eat a lot of bananas around here! We eat them plain, with a bit of peanut butter, or I make muffins!

Yum! My kids love mock ice cream and that is when you freeze the banana and than put it in the blender...we top with chocolate sauce..YUMMY!

These look good to me, although I would probably use part skim ricotta.
I love bananas that are sauteed in cooking spray on each side until they are browned. Then top with coconut (or coconut butter). So sweet and delicious that way!

Tiramisu is not a favorite, but I might try this recipe someday (without the coffee). I do something similar to Lori with caramelized bananas. I wonder how they'd taste with a bit of cocoa tossed in. (I feel a night-time snack coming on!
