Protein Peanut Butter Chocolate Cookies

So back on August 12th, I posted the Easy Peanut Butter Carob Cookies from NuNaturals. Then I updated the recipe on this post. Well, now I have made another change to the recipe & these are the best yet!!! At least to me, these taste AMAZING!! Honestly, to me again, almost too good! I LOVE THEM & also love the extra protein in them! The pic does not do them justice. They are a bit darker so sorry for the bad pic!

Jody's Protein PB Chocolate Cookies:

Ingredients: Makes 6 cookies

2 tablespoons + a little more peanut butter. Me, I add a bit more than "a bit".

1/4 cup oat bran

1/4 cup NuNaturals NuStevia Sweetener™ Baking Blend, or their MoreFiber™ Blend

1 - 1.5 scoops of vanilla protein powder OR your choice. Since protein powders are different, you may have to play around with the liquids to make the right consistency.

1 tablespoon carob powder (or cocoa). I used cocoa & just a little less than the full TBSP

1/8 teaspoon baking powder + a little more or at least I did

1 egg white or whatever you need to get the right consistency which should be thick & sticky like. I use liquid egg whites & I used at least 3 TBSP for the 6 cookies & obviously more for the double recipe. Add a TBSP at a time to see. Again, protein powders are different too so that is why you will have to find what works for your recipe.

1-2 cap fulls of vanilla extract or to your taste.
 


Directions

• Place all ingredients into one bowl & mix.
• Shape into little balls & flatten. They will puff up when baked.
• Bake at 350 degrees for 10minutes. I bake for only 8-9 minutes so they stay moist but each oven is different.

I keep out for a couple days & then to the fridge due to no preservatives. I usually heat up at power 3 for about 8-10 seconds. All microwaves are different. If you want, you could take your 2 cookies out ahead of time & let them sit at room temp for a few minutes.

I have also started doubling this recipe because I love a couple for a snack at night (IF you can stop at 2 or 2.5) OR just for a mini snack during the day. GREAT ingredients!

Now saying all this, I am a healthy eater so what tastes amazing to me might not to you but I love them & you can play around with them too!
