"Best-Ever Banana Bread"

I am still playing around with the NuNaturals recipes & tried this banana bread one. LOVED IT! What you can't see is that I had already cut off the end piece of this baby while it was still cooling! I LOVE the end pieces of everything including bread! I wanted to make for hubby BUT I think it will be part for me too! Of course I made changes that I will share after the original recipe below.

Best-Ever Banana Bread

 

Ingredients

1 cup whole wheat white flour

1/4 cup soy protein powder

1/4 cup wheat bran
2 ripe mashed bananas
1/2 cup egg substitute or egg whites
1/2 cup no sugar added applesauce
1/4 cup NuNaturals NuStevia Sweetener Baking Blend, or their MoreFiber Blend
1 tsp. vanilla extract
2 tsp. baking powder
2 tsp. cinnamon
1/4 tsp. salt

Directions

Preheat oven to 350 degrees. Spray a 5 X 9 (or any loaf pan) with nonstick baking spray.

Mix the egg substitute, applesauce, NuStevia Baking Blend, and mashed bananas.

Add remaining ingredients & mix well.
Pour the mixture into the loaf pan.
Bake for approx. 40 minutes, or until a knife inserted into the middle comes out clean.

Serve warm & ENJOY this delicious treat !

My Changes:


1. I used my Met-RX protein powder since I have no soy protein powder in the house. Next time I may use my whey protein powder.

2. I used oat bran instead of wheat bran since I did not have wheat bran in the house.

3. I used egg substitute, not real egg whites but it gives you the choice in the recipe.

Really loved this one. I did not add any extra this or that cause the hubby likes it plain & honestly, it is YUMMY!
