Healthy Cherry Cobbler Muffins

First, an update on the PB/Carob cookies from last week. Lori suggested I use 1/2 PB  flour & 1/2 whole wheat white flour & use extra egg white because PB flour soaks up liquid. I did this & a little more PB but no liquid stevia & these turned out GREAT! They puffed up more too!



Cherry Cobbler from NuNaturals:

Of course I changed it up to muffins as seen in the pic above but here is the original recipe. I will tell you my changes after the original recipe.

Ingredients - Serves 6

• 14.5 oz red tart cherries, pitted, packed in water ( reserve ¼ cup juice )
• ½ cup all purpose flour
• ½ cup NuNaturals NuStevia Sweetener™ Baking Blend, or their MoreFiber™ Blend
• ½ teaspoon cinnamon
• ½ teaspoon baking powder
• ¼ cup reserved juice from cherries
• ¼ cup 2%, skim, or fat free milk


Directions

• Spray a shallow baking pan, or 8-9” pie plate with cooking spray.
• Preheat oven to 350 degrees.
• Whisk together flour, NuNaturals Baking Blend, cinnamon, & baking powder.
• Stir in reserved juice and milk. Pour batter onto bottom of casserole.
• Pour cherries on top & bake 30-35 minutes, until top is golden, cherries peek through the crust, and a toothpick inserted in center comes out clean.


Gilding the Lily: Serve hot, warm or room temperature with a sprinkling of Confectioners’ sugar, fat free half & half, fat free whipped topping, yogurt, etc.

Tips from Rita’s Kitchen :

Cherries are a wonderful anti-oxidant fruit, containing vitamins A,C, calcium & iron.
Cinnamon helps stabilize blood sugar and lowers blood pressure.
NuNaturals Baking Blends add a sweet flavor without sugar, plus they add important soluble and insoluble fibers.
Try substituting whole wheat flour & use 1/3 cup ea. of reserved juice & milk. (Whole wheat flour requires more liquid than regular flour). Your body absorbs whole wheat products more slowly, and that’s a good thing!


So what did I change:

1. I used a bottle of cherries from Trader Joe's that had some sugar in it. These were for my hubby so it was fine for him. In fact, he said they were pretty good!

2. I used 1% milk since that is what hubby drinks & we have in the house.

3. I used whole wheat white four.

4. I always use way more cinnamon than called for!

5. I OBVIOUSLY made muffins instead of a loaf. I put some of the batter on the bottom, put about 5 cherries on top of that and them a little batter on to to make muffin cobblers!!! I got 6 muffins out of this recipe.

They were REALLY GOOD!!! Heck, use the fruit of your choice!!!
