Easy Peanut Butter Carob Cookies; Protein Muffin Update

First, an update on my protein muffins from last week. I made batch 2 with whole wheat white flour instead of the oatbran & loved this version too! I LOVE these muffins!





Peanut Butter Carob Cookies from NuNaturals:

Ingredients: Makes 6 cookies

• 2 tablespoons peanut butter
• 1/4 cup flour
• 1/4 cup NuNaturals NuStevia Sweetener™ Baking Blend, or their MoreFiber™ Blend
• 1 tablespoon carob powder (or cocoa)
• 1/8 teaspoon salt
• 1/8 teaspoon baking powder
• 1 egg white


Directions

• Place all ingredients into one bowl & mix.
• Shape into little balls & flatten with fork to get those old-fashion fork marks.
• Bake at 350 degrees for 10-12 minutes

So, what did I do different? I made 2 batches again!

1. In picture 1, I used stone ground whole wheat flour (all I had at the time), liquid egg whites and the unsweetened cocoa powder. All the rest was the same.

2. In picture 2, this was my 2nd batch. I used whole wheat white flour, a bit more PB, a few drops of NuNaturals alcohol free liquid stevia, liquid egg whites and unsweetened cocoa powder (all I have in the house).

Conclusion - they were both good BUT I liked the second batch better.

These are not going to taste like the "real thing" but they were good to me. Since I am not a baker, I felt like something was missing but could not place it - maybe a tiny bit of real chocolate would help or for me, more PB!  Yes, there is a bite out of one of the cookies in the pic!

Hubby said they were "too healthy tasting". You can play around with them to make them suit your taste & LOVED that it made only 6 cookies so there would not be a ton of them around. You can always double the recipe if you want to.
