Banana/Coconut Loaf

A quick update first on family fun - Having tons of fun with the 7 crazy kids & family! My Hoka shoes are saving my feet! I am wearing them for workouts & for everything else right now since we are walking like crazy. A peek of the fun above.




Lori from Finding Radiance posted this amazing looking recipe last week - Banana Bread Breakfast Pudding. I had to try it cause it looked YUMMY and it was EASY to make - which as you all know is my motto - make it easy!

Lori's recipe looked like this. You have to clock over there because she gives you a play by play on how to make it PLUS another option for a topping.

Me, I wanted to change it up for a bit more protein. So what I did was add a couple scoops of vanilla protein powder, added in some more egg whites (I used the liquid kind), a bit more coconut flour & cinnamon. I was not really measuring anything so I had to get the right consistency & topped it all off with unsweetened, reduced fat shredded coconut. I made mine in 2 mini loaf pans (first 2 pics) & then cut them into mini bites - sort of like a protein cookie! Can I say YUM!!!!!!!!!!!!!!!!!

No, mine does not look as good as Lori's but still tastes good to me!

Are you like me that takes a recipe & is always changing it up to meet your own taste? Do you measure exact or dump like me.

I know some track their exacts so they know what is going in & out, calorie wise. I make note of what I am doing so I make sure I don't go crazy but after all my years of this, I have a good idea of what works & does not work for me. Well, let me rephrase - this "time of life" hormone & age crap has made it more important for me to really be careful & pay attention more than I always did before this time of life. Weight & body change happen mysteriously these days! YIKES!
