Healthy Burger Recipes
Before some of you head out for a long holiday weekend, I wanted to offer up a couple recipes for non-traditional burgers. You might want to add them to your weekend menu.
A couple healthier recipes I saw on The Today Show.
Recipe: Asian salmon burgers - Serves 4
Ariane Duarte
Ingredients
- 1 pound skinless salmon fillet, cut into chunks
- 1/4 cup fresh whole-wheat bread crumbs
- 1 large egg white
- 2 large cloves garlic, chopped
- 2 teaspoons reduced-sodium soy sauce
- 1/2 teaspoon dark sesame oil
- 2 scallions, chopped
- 4 tablespoons pickled ginger
- 2 tablespoons toasted sesame seeds
- 4 whole-wheat buns, toasted
- 1/4 cup baby spinach
Preparation
Put salmon, bread crumbs, egg, garlic, soy sauce, oil, scallions, and 2 tablespoons of the ginger in food processor. Pulse until coarsely chopped. Form into 4 equal (3-inch diameter) patties. Sprinkle tops with sesame seeds.
Heat large nonstick frying pan coated with cooking spray over medium heat. Put patties sesame-seed-side down in pan. Cook 5 minutes. Flip and cook until done, 5 minutes longer.
Serve burgers on buns and top with spinach and remaining 2 tablespoons pickled ginger.
Recipe: Bison burgers - Serves 4
Ariane Duarte
Ingredients
- 1 pound ground bison or buffalo, preferably grass-fed
- 2 teaspoons Worcestershire sauce
- 6 tablespoons hot pepper jelly
- 4 thin slices 2% milk Cheddar (1 oz total)
- 3 tomatoes, sliced
Preparation
Combine bison, Worcestershire, and 2 tablespoons of the jelly. Form into 4 equal (3 1/2-inch diameter) patties.
Heat lightly oiled grill to medium heat. Grill burgers 4 minutes, flip, and top with cheese. Grill 3 to 4 minutes longer for medium-rare. Let burgers stand 5 minutes.
Serve burgers with tomatoes and remaining 4 tablespoons jelly.
Also, in case you are doing turkey burgers, check out this post from Tami for Asian Style Turkey Burgers.

Tami posted one the other day that looks good: http://nutmegnotebook.com/2011/06/asian-style-turkey-burgers/ Maybe when my son is gone this fall my husband and I can be more creative than just your plain old burger (which I eat without a bun).

Thanks for sharing the recipes! I love Ariane - I remember watching her on Top Chef. I think I need to make those Bison burgers only we can't find bison in town. Will have to substitute with grass-fed beef which we FINALLY are able to get. The perils of living in a non-progressive town!

Never had bison! Seen them running around Nevada. Talk about a bad hair day

Mmmmmm.... burgers! I love pork burgers. I actually eat the fattier meat, but I just have smaller burgers.

I feel so...pedestrian. I'm having a plain ol' beef burger. Depending on the size of it, I might get wild and add some pimiento cheese.
The cafe where I used to work served portobello burgers now and then. They were very popular. With other people, not with me.
