Easy Chicken Fajitas

Yes, it is Friday the 13th! Click on the link for more info on this day. How many of you out there are superstitious about this day & the number 13? Me, not so much & I have sat in aisle 13 on airplanes lots of time just to get the emergency exit seat & more leg room! ![]()
To help you celebrate Friday & Friday the 13th, let me share a recipe from this site. I think April from Foods of April shared it on her site & that is how I found it. Lots of cool recipes there too!
You all know I like simple & EASY!!! This is it AND so easy to modify to your own taste buds. Add more or different veggies. Use your fav healthy tortilla to wrap them up. Change up the spices to suit you. Me, I might top with some healthy guacamole! Make it your own & enjoy a healthy & satisfying meal!
Easy Fajita Chicken and Veggies
2 tbsp yellow mustard
2 tbsp Frank’s red hot sauce (or any)
1 tbsp chili powder (you could use chipotle chili powder to make it HOT)
1 tsp lemon pepper seasoning
2 lb chicken breast
1 red bell pepper
1 medium onion
Cut chicken into small bites so that it will cook faster and get more seasoning. Place 1 tsp to 1 tbsp of extra virgin olive oil in a pan on medium heat. Mix up all ingredients except veggies with chicken and coat every piece. Place in pan and cook for about 5-8 mins on each side, or until it is no longer pink. I covered my pan while it was cooking to keep the chicken tender.
After the chicken cooked, take out of pan and put in the bell pepper and onion, sliced into strips. Add 1/3 cup of water to “deglaze” the pan. This will get all the goodies that were crisp on the bottom into the veggies. Cook until tender and until the water/broth has reduced slightly.
Enjoy! I ate it with beans, lettuce, and greek yogurt. (from Christina)

I *used* to not be superstitious but geez my Friday the 13th is already a sh*tstorm -- blogger's been down for like a day, plus hubby is away for the night & I just got a call from a restricted # saying I am being watched and not to go anywhere. SO here I am at 4am wide awake. Sweet.

That sounds like a great recipe Jody! I didn't realize it was Friday the 13th until yesterday, after finding out our lawnmower was dead. I told hubby - today should have been the 13th!

Those fajitas look good! I don't eat fajitas too often, and maybe I should start. Of course, mine would probably have broccoli!

I make fajitas now and then since my boys will eat them. To clarify - they eat the protein out of the recipe and my husband and I eat the veggies too

This is the first ever fajita recipe with yellow mustard. Interesting.

Delicious looking fajitas! I don't have a favorite recipe for fajitas, so maybe this will be my new, favorite recipe.

We love the recipe and have it all the time (it doesn't help that we live near the Mexican border in south Texas). Haven't tried the mustard yet but we will on the next one. We also use fresh lettuce wraps instead of tortillas to keep it extremely healthy. They are juicy and taste great.

Looks good, but I'd leave out the lemon pepper. Not a fan.
