Sweet Potato Protein Cookie; Happy Bday's

First off, I have to say HAPPY BDAY to Gail. Gail is my hubby's ex-wife & yes, we DO get along. She lives in Idaho where the other 3 crazy kids are living. One of those kids is Brookie. Have fun.. I know you will!  Also, my niece Jennifer has a bday today too. She is the daughter of my hubby's brother. Happy bday!

OK, on to Sweet Potato Protein Cookies. I saw this recipe over at Nourished Fitness. Here is the original recipe below & the picture of those cookies. Below that, I will put my changes to her recipe & a pic of my cookie.

Nourished Fitness Recipe (link above):



1 medium Sweet Potato, baked/microwaved, mashed

1/4 cup Protein Powder (I used MGN Cake Batter Protein Powder)

1/2 cup Oatmeal

2 tbsp Canola Oil

Cinnamon to taste

Stevia to taste

Mix everything together. Drop spoonfuls onto a sprayed baking sheet and bake at 350 F for 15-18 min.

MY changes to the recipe & pic below of my cookies:



1. I did not have any canola oil in the house when I wanted to make these so I just used applesauce instead & added it in bit by bit to get the consistency I wanted for the cookies.

2. I wanted more protein to make it better to eat after a workout or as a mini protein treat so I used 3-4 scoops of my protein powder. I used a mixture of vanilla & oatmeal cinnamon flavor protein powder.

3. I added in lots of cinnamon & for another batch I made, I also added in pumpkin pie spice too.

4. One batch I made I put a TBSP of brown sugar. I also tried adding in a bit a pure maple syrup.

5. Thru all of this, I adjusted the applesauce, oatmeal & protein powder to reach the consistency of the cookie I wanted.

My goal here was to have a great tasting protein cookie but also did not taste exactly like a sweet potato but with the flavor being more subtle. I loved them! Heck, protein & a good source of carbs all in one!

Great thing about this recipe - obviously you can play around with it to make it your own!
