Sweet Potato Bisquits

I was at UCLA yesterday getting more "stuff" done so I did not get out to all my blog friends.. but I tried.... now on to good "stuff"!

So, with Thanksgiving coming up next week, I had to share this recipe. I was in the hair salon last week getting my gray covered, which was way overdue BTW. I really stretch that out since I could go every 3-4 weeks if I had the $$! I do that root touch-up in between colors once or twice to TRY & tide me over. With all this crazy hair, I can't do it myself!

OK, I digress!!! Anyway, as I sat there, I was reading a magazine & came upon this recipe. I thought it would be a wonderful one to share with the readers for the holidays. Heck, sounds yummy to me all year long! Now I only wish I had written down which magazine it came from! I used my cell phone to take pics.





Ingredients & instructions below - Makes 8

Ingredients:
1 medium sweet potato (about 5 oz.)
1 1/4 cups whole wheat biscuit mix
2 tbsp chilled unsalted butter, cubed
1/2 cup low fat buttermilk
1/4 tsp ground allspice

Directions: Got lazy here but it is readable!



Feel free to change it up with your seasonings & I am sure some of you can really make it your own, you great cooks/bakers out there!
