Protein Pumpkin Cookies

Protein Power Pumpkin Cookies



Just about a year ago, I posted this recipe. I thought with the "season", why not post again. I most likely would add more protein powder & adjust the dry & wet ingredients to accommodate the more protein powder. I also would skip the chocolate chips & MAYBE add some raisins instead, but that is just me. I don't use agave nectar so I may add a bit of 100% maple syrup & see how that goes.

Who doesn't like a cookie that is good for you & has protein and fiber all wrapped up in one cookie!
The original recipe is from Megan's Munchies. Here is the original recipe:

Ingredients:

1 cup pumpkin
1/4 cup applesauce
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
2 tbsp protein powder of choice
1 tbsp agave nectar
1/2 cup mini chocolate chips
2 cups rolled oats

Preheat oven to 350 degrees. Combine all the ingredients in the order listed. Mix until well combined. Drop cookies onto baking sheet and press down slightly. Bake for 15 minutes. Makes approximately 12 cookies.
