Orange Scented Quinoa with Turkey, Pecans, Cranberries
I was getting teeth work done yesterday so I was gone most of the day & did not get to many blogs BUT I had to thank you all for your wonderful comments on my big ole arms!

I saw this recipe in an old Clean Eating magazine. For those that don't know about quinoa, it is a powerhouse. It is called a complete protein. Below is a section from the Worlds Healthiest Foods site. Click on the links below for more info.
"Quinoa is an amino acid-rich (protein) seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. Not only is quinoa high in protein, but the protein it supplies is complete protein, meaning that it includes all nine essential amino acids. Not only is quinoa's amino acid profile well balanced, making it a good choice for vegans concerned about adequate protein intake, but quinoa is especially well-endowed with the amino acid lysine, which is essential for tissue growth and repair. In addition to protein, quinoa features a host of other health-building nutrients. Because quinoa is a very good source of manganese as well as a good source of magnesium, iron, copper and phosphorus, this "grain" may be especially valuable for persons with migraine headaches, diabetes and atherosclerosis."
So, here is the recipe & my suggestion is that you can feel free to add any type of additional protein you want to this recipe to suit your taste buds as well as your own spice blend .... or take out the meat & add more veggies if that is your thing!
Orange-Scented Quinoa
Ingredients
1 3/4 cups organic, reduced sodium chicken broth
1/2 tsp kosher salt (me, I would leave this out but season to taste)
1/4 cup fresh-squeezed orange juice (me, most likely would not fresh squeeze but up to you)
1 cup quinoa
1/4 dried cranberries
1/2 cup unsalted pecans, chopped (or nut of your choice)
1/4 cup parsley, chopped
1 1/2 cups cooked turkey breast, diced (me or shredded or torn - whatever is easy for you!)
Instructions: I know, lazy me, but they are readable!

I had this recipe ready to go for a week BUT I saw that Lori was going to post her sweet potato quinoa cakes recipe so I had to link to that too & show the pic below!!! Check it out! I told her that I thought it was a sugar cookie at first. I know, I am all about my weekend cookie treats!

Yum! It also keeps well in the fridge so you can add it quickly for a carb/ protein mini meal!

Both look and sound so yummy! I've never really knew what to do with quinoa..I made it like rice once and it was ok. Oh, and I made alyson's muffins with it though, and those were good!!

I bookmarked this one - I've been thinking about making something with the Costco bag of quinoa sitting unused in my pantry! That first recipe looks like a great Thanksgiving leftovers idea. Yum.
