Hot Chocolate Recipes; Pumpkin Scone

Fall is here & winter is coming. We all love our warm drinks during this time of year. Here are a couple cool recipes to warm the insides on those cold days.. and as always, you can modify to meet your own taste buds! The first recipe is from an old Clean Eating magazine, Jan/Feb 2009 (first pic above). The second recipe is from Joanna at Fitness and Spice (second pic above). For those that don't know Joanna, she has a very cool site & great recipes too!!!!!

Mint-Infused Hot Chocolate

Ingredients:

1 mint green tea bag (decaf or regular)
1/4 cup boiling water
3/4 cup unsweetened almond milk
2 tsp unsweetened cocoa powder
1 tbsp light or amber organic agave nectar (or sweetener of your choice)
Sprigs of mint for garnish - optional

Instructions:

1. Place tea bag in a cup & pour water over it to make tea essence, letting steep for about 2 minutes. Squeeze tea bag & remove from cup.
2. Meanwhile, heat almond milk over medium heat in a small saucepan until very hot, but not boiling. Add to tea essence, then stir in cocoa powder & agave nectar or sweetener. Mix with a spoon until all the cocoa powder has dissolved. Garnish with a sprig of mint, if desired.

Nutrients per cup: Calories, 98; Total fat, 3g; Saturated fat, 0g; Carbs, 19.5g; Fber, 2g; Sugars, 16g; Protein, 1.5g; Sodium, 136mg

OPTION: Almond Hot Cocoa - use an almond flavored tea

Fitness & Spice Chocolate and Caramel Protein Shake

1/3 cup Chocolate Protein Powder (I used whey)
1 T Sugar Free Caramel Syrup (I bought mine at Starbucks)
1 cup Water
A dash of Himalayan Salt (Celtic Sea Salt will work, too in a pinch)

Blend all ingredients together except for the salt. Pour into a microwave safe coffee mug and microwave for 45-60 seconds. Sprinkle with salt. I said sprinkle with salt–if you over salt, it will ruin everything. Per Joanna, why the salt? It brings out the flavor of the caramel, but if you’re a sodium watcher, you can skip it. The stats are not on that link but I got them from Joanna and they are: servings: 12, calories per serving: 130, fat: 5.8g, sodium: 200, fiber: 3.1g, sugar: 3.7g, protein 7.5g

OK, warm up those insides on a cold day... curl up & read a book or watch your fav show or just sit & enjoy the scenery out the window!
