Beef Stew; Baked Apple Crisp; LIVESTRONG; Breast Cancer

I have a couple great fall recipes for you! I know I put a lot of chicken & turkey recipes here because I am just not a fan of red meat so I don't cook it... BUT, I know many of you out there are & why not offer up a recipe that warms you up during the cooler months & also has a decent nutritional profile! Found this recipe in Oxygen Women's Fitness.

Beef Stew

Being lazy again so just providing a pic of the ingredients and directions along with the nutritional profile. It takes me forever to type it out. I think I wrote about my typing class in high school... not a pretty pic!


Of course it is easy to change up the veggies to what you want & add or delete spices to meet your taste buds. If you want to reduce the sodium, feel free to adjust that as well! I think this looks pretty dang good!!!!

In addition, it was a bit of a tease on the baked apple crisp.... but I think the ease of this for a yummy snack, had to share.... and saw it in Oxygen Women's Fitness too. It was a reader recipe.

Baked Apple Crisp
Put a quartered apple with a bit of water into an ovenproof pan. In a bowl, mix 1/4 cup dry oats with 2 TBSP of water. Top apples with the oat mixture & sprinkle with cinnamon. Bake at 400 degrees for 20 minutes or until topping is crispy.

Now this sounds yummy to me!!! I was thinking of how I could add some protein powder & maybe a smidge of brown sugar to the oat mixture. Not being a cook or baker, anyone out there think that would be OK???
