Breakfast Brownies; Pumpkin Protein Ice Cream; PB Protein Cookies

I saw these recipes below over at 
Fitness and Spice & had to share! With fall coming & those flavors we all love this time of year, check out the EASY ice cream recipe.. and oh so many ways to change it up buy changing the flavor of the protein powder, the spices, add in a little of this or that & voila, YUMMY!!!! Brownies, what else is there to say!

Pumpkin Protein Ice Cream 
  • 1/3 cup vanilla protein powder
  • 1/3 cup water (I’m sure unsweetened almond milk would be great, too)
  • 2 T pumpkin puree
  • Cinnamon and nutmeg to taste
Blend all ingredients together and pour into a freezer safe dish. Freeze. Eat

  • 1 can Pumpkin Puree
  • 2 T Coconut Oil
  • 2 cups Chocolate Protein Powder
  • 2 T Dark Cocoa Powder
  • 1/2 t Baking Powder
  • 1/2 t Baking Soda

Combine all ingredients in a large bowl. Stir. Pour into a prepared 8×8 pan and bake at 350 for 15 minutes. Allow to cool and serve with the topping of your choice, like peanut butter or your favorite butter spread.

To me, both of the above sound like a great snack or a mini meal with the addition of a little more for me!

I also made the PB 
protein bars from last Friday but added more protein powder, used applesauce rather than pumpkin cause that is what I had in the house, added a bit more cinnamon & egg whites/applesauce due to the extra protein powder & then made them into cookies! I just made them into a consistency for baking cookies & then watched my time. I went about 12 minutes but you may have to change that depending on your oven. Watch them & DON'T over bake! I know, I changed a lot but still liked them! I will do the bars next time!

Anybody else try PB flour yet? Liking it so far & I continue to experiment. Want to chime in on a variation from your own kitchen that you might try with the above recipes. Oh, April told me that peanut flour was bought at Trader Joe's & that is where I found mine.
