Low Cal P-Nut Protein Bars; Happy Bday Linc!


First off, have to say a very HAPPY BDAY to cute Lincoln, who I call Lincoln log! Anyone else play with those as a kid.. or now!!!

So, for a Friday recipe, here is a cool easy to make one from April. They look yummy & easy to take with you. I have not tried to bake them yet but soon!!! I have to buy the peanut flour. Anyone baked with that yet?
Low Cal P-Nut Protein Bars

Makes 8 bars @ 68 calories, 11 grams of protein, 2.5 net carbs, trace of fat each
Ingredients:
- 3/4 cup peanut flour
- 1 serving (30 grams) vanilla protein powder
- 3/4 cup liquid egg substitute
- 1/4 cup pure pumpkin
- 1 tsp baking powder
- 1/2 tsp NuNaturals No Carb Blend
- Cinnamon to taste
Directions:
- Preheat oven to 350 degrees. Spray an 8 x 8 pan (or muffin tins) with nonstick baking spray.
- Mix all ingredients together.
- Pour batter into pan.
- Cook for about 20 minutes, or until a knife inserted into the center comes out clean.

Wow peanut flour - never heard of it. Seems anything that grows from dirt can be made into a flour. Cinnamon to taste huh. They say cinnamon is useful as an insect repellent, so as I might take a batch of these on a long hike on a muggy day hit me heavy with that stuff please!
