Blueberry Coconut Oatmeal Muffins to Go! Homemade Energy Bars; Eggs-RECALL!
I saw this great recipe at Nourished Fitness & had to share. It is yummy, easy to make & change to your own taste, eat at home or take with you & kids will like it too!

Blueberry Coconut Oatmeal Bites
1/2 c Oats
3/4 c H20
2 tbsp Sugar-Free Coconut Syrup
1/2 tsp Baking Powder
Stevia to taste
Cinnamon to taste
1/3 c fresh Blueberries
Mix everything together. Let sit for 5 minutes. Pour into muffin tins and bake at 350 F for 35 min.

Yum. Wonder if maple syrup or honey would work in place of the sugar free syrup.
One of my quick go to snack is to take 1/2 can of pumpkin, mix with one egg white and 1-2 tsp honey and some cinnamon. Microwave for a minute or 2 until puffed. Kind of like a quick pumpkin pie.
