Healthy Pancake Recipes!

OK, all about pancake recipes! Got to say that I loved pancakes as a kid & well the butter & syrup on them!

Blueberry Breakfast Awesomeness



Pancake perfection.. in blueberry form:

1 scoop Cake Batter Protein Powder

3/4 tsp Baking Powder

1/2 tsp Vanilla Extract

1/4 c Egg Whites

1/4 c Oats, ground to flour

2 tbsp UVAB (unsweetened Vanilla Almond Breeze) + 2 tbsp H20

~1/3 c fresh Blueberries

Topped with 0-calorie maple syrup (I promise it wasn’t as much as that pool makes it look :p)


Oat Cake Protein Pancakes



4 scoops Cake Batter Protein Powder

1.5 tsp Baking Soda

1/2 c Oats, ground to flour

Cinnamon, to taste

3/4 c Egg Whites

1 tsp Vanilla Extract

1 c H20 (the new protein powder (PP) is super thick) Readers may want to work in the water as to not overdo since all PP are different.

Blend everything together in a large bowl with a Hand Mixer. Cook stovetop over medium heat. Makes 7 pancakes.

Charlotte's Variation on The Protein Pancake

Per Charlotte: They're a whole plate of fluffy deliciousness for a low-carb, high-protein 100 calories. And that's not 100 cals/pancake but 100 calories for the whole recipe! I get 5 good sized pancakes out of it.

3 egg whites
2 Tbsp oat flour (others use coconut flour, almond flour, whole wheat flour, buckwheat flour, brown rice flour etc. I've tried them all and they all work but the oat's my fave.)
2 Tbsp almond milk (or regular milk)
1/4 tsp baking powder

Whip the egg whites to stiff peaks. Stir in other ingredients. Cook. (Like you need my direction on how to flip pancakes, right?) Top. (I love coconut butter, cashew butter and/or chunky applesauce on mine.) Eat. Melt into a puddle of joy.

These are so fluffy they're almost like angel food cake but without the sugar. Totally worth the few extra minutes it takes to beat those bad eggs.

OK, who wants pancakes!!!!!!! I am thinking you can make some extra & keep around for a quick mini meal or snack! Heck, top with some healthy PB, almond butter, sunbutter or whichever is you fav!
