Protein Cookies By Jody!!! Spinach Recall


Back in February of 2009, I did this post on a good homemade protein bar from Clean Eating Magazine that is easy to make & tastes good ... or at least I think so. I am not a good cook or baker so if I can do it, so can you. The thing I like about this recipe is you can change it up yourself to meet your taste buds. You can change the nuts in it, the flavor of protein, the spices, the amount of syrup and more. I added more cinnamon & a bit more vanilla extract & just a tad less maple syrup because I like those flavors. I have used pistachios instead of almonds (I chopped up my nuts). I made them in a cupcake tin rather than the tin foil. Play around & if you find better ways to make these or ways to reduce the sugars, let me know. I am not a baker so I don't know the rules! Also, really, DO NOT OVERCOOK! I even made mine in my convection toaster oven & baked for 15 minutes & they came out great. I like them warm so I heat them up in the microwave before I eat them. They are good at room temp too!
I wanted to add that I bought some of those mini loaf pans & are now make them in those pans instead of using the tin foil or the cupcake tin. They are really too big for the amount you put in but that is OK. Just measure out the amount equally among the mini loaf tins for 6 bars (that is what the recipe makes) & as they bake, they spread out perfectly & make a nice little protein bar! Again, I also mix it up with different nuts in them & I like to add ground flax as well.
SO, I took the recipe below & altered is a bit to make protein cookies. I cut way back on the maple syrup, added in baking powder & soda as I did not know which I should use ( I know - bad!), added in some NuNaturals Baking Blend, a little bit of light brown sugar & a little no sugar added pineapple juice from the canned no sugar added crushed pineapple I had in the house..
I also took half the oats & blended them in the Magic Bullet to make more a flour out of them & half rolled oats instead of 1 cup of just rolled oats (I also tried half whole grain flour/half rolled oats and like them both but I like the all oats version better). I added a bit more protein powder (cinnamon oatmeal flavor & vanilla flavor) & then just played with it consistency wise in terms of adding more rolled oats or protein powder to get it the right consistency to hold a cookie. I baked for about 9-11 minutes. Be careful as they are easy to overcook! I think I got about 12-15 cookies out of the batch.
I am so proud of myself for modifying this to cookies & they are a great treat or quick protein and healthy fiber fix for me! Low cal, low fat, lots of good fiber & protein... LOVE THEM! That is the big prob.. I want to eat them non-stop! Play with the recipe & add your own touch of spices or protein powder. If you really like one of your creations, come back & let us know! OH, I always leave out the salt in most of these recipes as I don't ever really need that. The spices do fine for me!

Here is the original protein bar recipe so you can play around with it as you see fit. Most of you are better bakers than I am!
Nutty Maple-Cinnamon Bars courtesy of Clean Eating Magazine - 6 Servings
INGREDIENTS:
1 cup rolled oats, divided
3 tbsp unsalted almonds
4 scoops vanilla protein powder
1 tsp cinnamon
1/2 tsp sea salt
3/4 cup unsweetened applesauce
1/2 tsp vanilla extract
4 tbsp pure maple syrup
Olive Oil cooking spray
INSTRUCTIONS:
Preheat oven to 350 degrees F
In a clean dry blender, process 1/2 cup rolled oats into oat flour; blend on medium for about a minute. In a large bowl, stir together prepared oat flour, remaining 1/2 cup rolled oats, almonds, protein powder, cinnamon & salt. Then combine applesauce, vanilla & maple syrup together with dry ingredients & mix thoroughly.
Cut 6 squares of aluminum foil into 4x8 inch pieces. Lightly coat the interior with cooking spray (important!). Spoon out an equal portion of mixture onto each foil square & roll them into a bar shape. Fold them like tamales, folding the ends over to prevent spillage. You can flatten them into bar shapes if you want to avoid the tube shape.
Bake foil-wrapped bars on a baking sheet in preheated oven for 16-18 minutes. DO NOT OVERCOOK. Store leftovers in a sealed container in the fridge.

Spinach recall -- all the more reason to eat locally grown food.
Regarding the bars - I may try to find time to play around with this and see if I can make it sugar free, or close to that.
