Recipes for July 4th!
Happy July 4th weekend! I hope many of you get a long 3 or 4 day holiday! With these holidays, we also get family and/or friend get togethers. So, I thought I would share some healthy recipes off the WebMD site to either have at your party or to take with you to another get together.Choose to get thru July 4th the way that is best for you. Me, I continue to exercise even if I have to switch around days or times. I just want to get it in as it makes me feel better & I feel better if I enjoy a few extra things I don't normally eat.
Me, I don't go hog wild. I know some of you choose to just enjoy with abandon. For me, I always feel UGH if I go overboard. I plan for what I want to splurge on & eat healthy the rest of the time. Sort of like every weekend for me. That & my normal exercise get me through. BUT, if for any reason I get "crazier than normal", not to worry. It is just back to it the next day!
Grilled Chicken and Polenta with Nectarine-Blackberry Salsa: Sounds delicious!
Grilled nectarines and fresh blackberries turn into a summery salsa to top cumin-rubbed chicken and polenta in a dish that’s special enough for weeknight entertaining. Make it a meal: Serve with a spinach salad and a crisp glass of rosé.
Servings: 4; Total Time: 40 minutes; Prep Time: 40 minutes
Recipe Ingredients:
- 1 tablespoon plus 1 teaspoon canola oil, divided
- 1 tablespoon ground cumin
- 1 teaspoon kosher salt, divided
- 3/4 teaspoon freshly ground pepper
- 1 16- to 1
unce tube prepared plain polenta - 1 pound boneless, skinless chicken breast, trimmed
- 2 nectarines, halved and pitted
- 1 pint blackberries, coarsely chopped
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- Hot sauce to taste
Recipe Steps:
- Preheat grill to medium-high.
- Combine 1 tablespoon oil, cumin, 3/4 teaspoon salt and pepper in a small bowl. Rub 1 teaspoon of the mixture all over polenta. Rub the rest into both sides of chicken. Cut the polenta crosswise into 8 slices. Rub the cut sides of nectarine halves with the remaining 1 teaspoon oil.
- Oil the grill rack (see Tip). Place the chicken, polenta slices and nectarines on the grill. Grill the polenta until hot and slightly charred, 3 to 4 minutes per side. Transfer to a clean plate; tent with foil to keep warm. Grill the nectarines, turning occasionally, until tender, 6 to 8 minutes total. Grill the chicken, until cooked through and no longer pink in the middle, 6 to 8 minutes per side. Transfer the chicken and nectarines to a cutting board. Coarsely chop the nectarines. Let the chicken rest for 5 minutes, then thinly slice.
- While the chicken rests, combine the chopped nectarines, blackberries, cilantro, lime juice, hot sauce and the remaining 1/4 teaspoon salt in a medium bowl. Layer the polenta, chicken and fruit salsa on 4 plates and serve.
Recipe Tips & Notes:
- Tip: To oil the grill rack: Oil a folded paper towel, hold it with tongs and rub it over the rack. (Don’t use cooking spray on a hot grill.)

Nutrition Bonus: Vitamin C (35% daily value), Fiber (24% dv). 2 Carbohydrate Servings; Exchanges: 1 starch, 1 fruit, 3 lean meat 1. Add spinach, blackberries, cheese, cherry tomatoes, green onion, and walnuts to a large serving bowl. Toss to blend well.

Oh I like the look of that blackberry salas...
We are having family over for a cookout Sunday here. We're planning two beer can style Smoked Chickens; one Garlic and the other BBQ, four racks of smoked baby back ribs; 2 dry rub and 2 wet, and a Bacon Explosion for the kids. Oh and a huge salad! No shortage of temptations to shield against while entertaining the family.

I won't be unplugging, as I have to work Sunday and Monday. It won't be too busy, I imagine, and at least I can take my netbook and work at the picnic the family is having on Sunday. Better than nothing!
I am going to try to be mindful this weekend. We are going on a huge ride Saturday, so that means no exercise on Sunday (may not be able to move much LOL).

That fruit salsa sounds yummy. Interesting combination of fruits that sound so summery. My favorite dessert to bring in the summer is fresh strawberries with a bit of whipped lite cream cheese piped in the center. Everyone always thinks I'm so fancy, but they are super easy.

We had Canada day here in Canada yesterday and my treat for the day was to eat some Doritos and a glass of coke. Other than that my eating for the day was right on. I just don't like how I feel anymore if I don't clean eat!
Normally I would have still hit the gym regardless of the holiday but, I have been going solo all week and just really did not want to be a loner at the gym again so decided to take an unexpected day off. Going today though for sure, need to get my leg workout in. Not sure about those Firewalkers though! LOL
