Cinnamon & Sugar Puff Cookies with Protein

First things first: I want to thank you all for your wonderful comments to my post yesterday! You are all amazing!!!!!

Now, on to cookies!!! Last Friday I shared a yummy recipe from Lori for protein cookies. I wanted to let you all know that I only had whey protein in my house so I made the recipe & cooked it in a pan vs. cookie shape per Lori's instructions. Yes, the whey protein powder did make it too thin for cookies. I also decided that why not make it more a homemade protein bar for after workouts or on the run type days so I added in more protein powder, a bit more cinnamon & I used my cinnamon/oatmeal protein powder. I also had to cook them longer... about 20 minutes or so but you may want to keep an eye on yours if you try this as we all know ovens can be different. They turned out GREAT & YUMMY!!! On another batch, I substitued half the amount of oat bran with oatmeal & those came out just as good! Now, I still have to try the original recipe!

So, today, I have a different protein cookie for you from April at Foods of April. I found it interesting that April offered up different flours to use & how they would effect the actual outcome. I guess something for everyone there!

I know the Better 'N' PB is at Trader Joes & you can Google it to find other locations to buy it if you want to try this recipe out. Let us know what you think if you bake these!

Cinnamon and Sugar Puff Cookies: Makes 11 big  cookies @ 72 calories, 7 grams of protein, 7 net carbs each (for the rye-flour version)

 

Liquid Ingredients:

·         1/4 cup 0% Fage

·         1/4 cup Better’N'Peanut Butter

·         1/4 cup NuStevia Baking Blend

·         1/4 cup liquid egg whites

·         2 tbsp Sugar Free Maple Syrup

·         1/4 tsp pure stevia

·         1 tsp vanilla

Dry Ingredients:

·         1/2 cup flour choice (see options)

·         65 grams of vanilla protein powder

·         1/2 tsp baking powder

·         1/2 tsp baking soda

·         Cinnamon to taste

Directions:

1.      Preheat oven to 350 degrees. Spray a baking sheet with nonstick baking spray, set aside.

2.      Mix all of the liquid ingredients together.

3.      Add in dry ingredients, mix well.

4.      Drop spoonfuls of the dough (it will be a bit sticky) onto the sprayed baking sheet.

5.      Bake for about 15 minutes, or until they have risen and a toothpick inserted into the center comes out clean.

**FLOUR OPTIONS:

1.      For a regular cookie, use rye flour.

2.      For a low-carb version, use soy flour.

3.      For an oatmeal cookie version, use oats.

4.      For a higher-fiber version, use whole wheat flour.

5.      For a nuttier taste, use almond flour!
