Sun-Dried Tomato & Basil-Stuffed Chicken Rollitini

I saw this recipe in Muscle & Fitness Hers & thought many of you would like it. It sure looked yummy to me.
Sun-Dried Tomato & Basil-Stuffed Chicken Rollitini - Serves 4
Nutritional Info per serving: 215 calories; 31g protein; 18g carbs; 3.2g fat; 2g fiber
Ingredients:
4 skinless, boneless chicken breasts
8 slices sun-dried tomatoes (in olive oil)
1/4 cup fat-free ricotta cheese
3 tsp kosher salt, divided
1/2 cup finely chopped basil
2 egg whites, beaten
1/2 cup whole-wheat Panko bread crumbs
1 tsp black pepper
1/2 tsp garlic powder
Nonstick cooking spray
Directions:
1. Preheat oven to 350 degrees F. Butterfly chicken breasts, then pound between clear wrap until they are about 1/4' thick... or you can buy the super thin ones.
2. Stir together sun-dried tomatoes, ricotta cheese, & 1 tsp salt. Spread 1/4 of cheese mixture onto each chicken breast, then sprinkle basil on top. Roll up chicken breasts, tucking in loose pieces. Secure with toothpicks.
3. Pour beaten egg whites into a flat dish. Mix breadcrumbs, remaining salt, pepper & garlic powder in a second dish.
4. Dry rolled chicken breasts with a paper towel & place in egg whites, coating completely. Then roll chicken in breadcrumb mixture until covered.
5. Place chicken in a baking dish coated with nonstick cooking spray, leaving space between each chicken breast.. Bake for 45-50 minutes or until internal temp reaches 165 degrees F. Let stand for 10 minutes before serving to help keep chicken moist.
All I can say is YUMMY!!!!!!!!!!!!! Now saying that, I am a simple cook & not sure I would go thru all this to make it BUT I know there are many great cooks out there & hope you enjoy the recipe!

This looks like a recipe that would be nice to serve to company. I'm always looking for something that I can handle. Being a little challenged in the culinary department, I think this looks like something I could manage.

I do like this mag. Like all others, there is give & take, good & bad, BUT I like seeing new ways of doing exercises & this one adds to that. along with some good food stuff. Check it out in your local bookstore first to see what you think.

That really does look delicious but, I have no patience for cooking so don't think I will make it either. I am surprised my kids haven't starved with my cooking impatience. LOL.
