Healthy Breakfast Cookie

Had to share this really cool recipe for a Breakfast Cookie with you from Nourished Fitness. She was sharing it from Fitnessista. I know some of these recipes look weird to some of you out there but hey, never hurts to try, right???!!! PLUS, you can play with the ingredients to meet your taste buds!


In a small bowl, add 1/3 cup oats, 1 tbs nut butter of choice (I used raw almond) and 1/2 scoop protein powder (tonight was chocolate Designer Whey)

Stir to combine and use the spoon to break up the nut butter until you have a nice crumbly mixture:

Add 1/8 cup milk of your choice (For me, unsweetened vanilla almond milk) and mix until fully moistened

Now the fun part- pick the mix-ins! You can get creative with this one– I’ve tried banana, raisins, pumpkin, chocolate chips, ground espresso beans… add anything you like <img

Tonight, I decided on 1/2 mashed banana that was looking a little ripe

Stir in your mix-ins of choice and season (I used a little Stevia and cinnamon)

Plop the mixture onto an appetizer-sized plate and with the back of your spoon, flatten it into a round shape with equal thickness throughout

Put the cookie in the fridge overnight. It will harden slightly from the nut butter and the oats will soften from the milk.

Next morning, grab a spoon and enjoy <img

What do you think? Will you try it? Hey, it does not have to be breakfast either! Make it early & then take it out for a mid-afternoon mini meal or snack! Looks like an oatmeal cookie to me. Anything that looks like an oatmeal cookie is a good thing to me!

      Interesting. I did not expect it to be like a cookie you could pick up based on the pic but I guess you can flavor it however you like to change the taste, right? I am not a baker/cook but I was assuming that. I have been able to do that with other healthy recipes.. changing the flavor with different spices or protein powder. I have not had overnight oats but I like the flavor of oatmeal with some cinnamon & raisin so it might be OK for me. Have not tried it yet.

    You know Jody, I see stuff like this (healthy recipes)on-line all the time, and I ALWAYS pass right over them because I am a very particular eater. That said, this one actually looks like a keeper. I will try it, but more likely as a snack or late day meal. This time of year, breakfast is a salad -- love the summer breakfast salads, even though its not quite summer yet.
