First, I want to thank all my readers for stopping by, making AMAZING comments & just fun to have you around! I LOVE all your blogs & learn something from every single one of them. I am inspired by you all! It has been so much fun reading & listening to you in 2009. Here is to a fantastic 2010 for all! May your dreams become reality!

You just might have to modify the suggestions a little.

Lastly... the yummy muffins!!!!!!!!!!

A couple weeks ago, I did a post on protein powder & baking with it. Well, to follow up, here is a yummy sounding recipe utilizing your fav protein powder! Might be nice for a New Year's brunch! Me, I might try to add a bit more protein powder in there just to up that protein content a bit but that is just me. AND, with my minimal baking skills, I might be the only one that likes them!


Cocoa Muffins - Makes 12 muffins - from Oxygen Women's Fitness


Ingredients:

Nonstick oil spray
1 1/4 cups oats
1 cup whole wheat flour
2 tbsp unsweetened cocoa powder
2 tbsp whey protein powder (vanilla or chocolate)
1 tsp baking powder
1/2 tsp baking soda
1 large egg
1 cup unsweetened applesauce
1/2 cup buttermilk (or 1/2 cup low-fat milk + 1/2 tsp white vinegar)
3 tbsp agave syrup
2 tbsp olive oil
1/3 cup raisins

Directions:

1. Preheat oven to 350 degrees. Lightly spray a 12 cup muffin pan with oil & set aside.
2. In a large mixing bowl, combine oats & the next 5 ingredients.
3. In a mixing bowl, whisk together egg, applesauce, buttermilk, syrup & oil.
4. Make a well in the center of the sry ingredients & pour in egg mixture.Stir just until all dry ingredients are moistened. Stir in raisins.
5. Pour better evenly into the muffin cups. Bake for 20 minutes or until tops spring back when lightly touched. Cool on a wire rack.

Nutrients per muffin: Calories: 182, Total Fat: 4g, Saturated Fat: 1g, Trans Fat: 0g, Cholesterol: 20mg, Sodium: 122mg, Total Carbs: 30g, Fiber: 4g, Sugar: 9g, Protein: 8g, Iron: 2mg

Hope you like these recipes & might be able to use them to R&R one morning. Nothing like one of these warmed up & a nice cup of tea (scroll down to the tea info at this link) or coffee! We all deserve some down time! Based on reading all your blogs, you deserve it!!!!!
