Green Smoothie: Protein Power Pumpkin Cookies

OK, another recipe from Oxygen Women's Fitness. I picked this because I have read so many blogs out there that are getting hooked on green smoothies & the writer & readers seem to love them! So, another take on Green Smoothies!

Lean Green Shake - Makes 1 serving

Ingredients:

2 cups baby spinach
1 ripe kiwi, peeled & quartered
1 cup low fat milk
1 scoop vanilla or plain whey protein powder
1 tsp vanilla

Place all ingredients in a blender & process until smooth. Serve immediately over ice. OR, maybe you want to reduce the milk a bit & add the ice in & blend it. That is what I would do. As always, play around with it to suit your taste.

Nutrients per serving: Calories: 226; Total Fats: 1g; Saturated Fat: 0g; Cholesterol: 15mg; Sodium: 254mg; Total Carbohydrates: 28g; Dietary Fiber: 4g; Sugars: 21g; Protein: 27g; Iron: 2mg





Protein Power Pumpkin Cookies



Who doesn't like a cookie that is good for you & has protein and fiber all wrapped up in one cookie! I saw this first at
Thinspired at this post. She explained some substitutions she made like using some wholewheat flour for half of the oats because she ran out of oats and using vanilla protein powder plus adding a little extra agave nectar for sweetness. I might use raisins instead of chocolate chips but that is just me! The original recipe is from Megan's Munchies. Here is the original recipe:

Ingredients:

1 cup pumpkin
1/4 cup applesauce
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
2 tbsp protein powder of choice
1 tbsp agave nectar
1/2 cup mini chocolate chips
2 cups rolled oats

Preheat oven to 350 degrees. Combine all the ingredients in the order listed. Mix until well combined. Drop cookies onto baking sheet and press down slightly. Bake for 15 minutes. Makes approximately 12 cookies.
