Pumpkin Protein Breakfast Cookies

Another great recipe from GirlGetStrong. GoGo girl, Sian, actually made these to eat as a breakfast cookie for her busy family during the week.  She said the kids actually thought they were having a ‘cookie’ for breakfast and lots of great ingredients & protein & fiber too! For me, I might even throw in some more protein powder to up it just for me! AND, not just a fall eat for me either! Pumpkin is great for you with only 83 calories per cup of canned pumpkin, no salt added. For that 1 cup:  .07 grams of fat, 19.8 grams of carbs,  fiber of 7.1 grams, 2.7 grams of protein, 63.7mg of calcium and 504.7mg of potassium!

Ingredients:

  • 1/4 cup honey 
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 2 scoops protein powder 
  • 1 3/4 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 cup pumpkin puree (or fresh if available)
  • 1 tablespoon apple butter or apple sauce 
  • 2 teaspoons water
  • 2 egg whites
  • 1 teaspoon molasses
  • 1 tablespoon flax seeds 

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). 
  2. In a large bowl, whisk together honey, oats, wheat flour, protein powder, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir in pumpkin, apple butter, water, egg whites, and molasses. Stir in flax seeds, if desired. Roll into 14 large balls, and flatten on a baking sheet.
  3. Bake for 5 minutes in preheated oven. DO NOT OVERBAKE: the cookies will come out really dry if overbaked.

Per Sian, these freeze really well.  You could experiment with some extras, such as raisins, nuts or any dried fruit.  Nutritionals per their post: 85 calories; 6 g of protein; 3 g fiber per cookie

Hey, I was also reading The Great Fitness Experiment Wednesday & she did a guest post with a link to a no flour, no fat, no sugar chewy chocolate cookie! She offers up options for the sweetener. Check it out. She said they actually taste good!

    Too funny - I was just wondering what to do with a half can of pumpkin in my fridge! My kids will love these for brekkie!

    And the no-nothing chocolate cookies are FAB. Probably the thing I get asked to make the most (not that people ask me to cook often - they're too smart for that). They are really finicky tho, so do follow the directions exactly.
