More Healthy Recipes including No Bake Chocolate Oatmeal Cookies!

OMG, don't these cookies look wonderful! I could just lick the screen!!!!I think I found this in Clean Eating magazine. The very cool thing is you do not have to bake these cookies. You just out the ingredients together & eat right then or chill for later! How exciting is that! Of course the bad thing is you can start eating them right way!
My question to the bakers out there... are these type of dates different from others & can you get cacao nibs in the store. I looked at Trader Joe's but nowhere else yet. I suppose you can make your own substitutions too but be aware that the nutritionals may change. They sound so good to me!
No Bake Chocolate Oatmeal Cookies
- 1 1/4 cup raisins
- 1/2 cup pitted Deglet Noor Dates
- 2 cups whole oats
- 4 tbsp agave or honey
- 2tsp cinnamon
- Pinch of salt
- 1/2 cup cacao nibs
INSTRUCTIONS:
1. Place raisins & dates in your food processor and chop into small pieces. Add oats, agave or honey, cinnamon and salt. Process to mix well. I am guessing I could do this in my hard core blender too. Empty into a mixing bowl and add cacao nibs. Mix well.
2. Use a tablespoon to portion cookies. Enjoy immediately or you can chill before serving for a firmer texture.

Calories: 140, Total fat: 3g, Sat. Fat: 1.5g, Carbs: 26g, Fiber: 3g, Sugars: 7g, Protein: 3g, Sodium: 15mg, Cholesterol: 0mg

The no-bake cookies sound great! I once followed a similar recipe for raw vegan brownies (dates, walnuts and cocoa powder blended together and placed in the freezer to harden - sadly I went crazy and ate the whole pan later that day ;-()
I'm not an experienced baker, though I am trying, but I have used different types of dates then stated before without problems - I think purists would say that certain dates have more flavour, but I've never noticed it; the only other thing I'd be worried about is whethere there is a significant size difference between the different types that might throw your proportions out, and I think you'd be able to tell that if it were too crumbly or ridiculously sticky anyway! Hope they turn out well!

Yummy! I love no-bake cookies. The Biggest Loser website had a similar recipe that used PB with dates and they were awesome - can't wait to try your version!

Wow! It all looks delish. As for the pie, if I consider the entire thing one serving (for me), does it still count as 150 calories??

I've never made 'no bake' cookies and not actually heard of that. No bake cookies is not an Australian thing. Look delicious though!
