Now, back to recipes. I think you all have read enough times about how I am a fairly boring & not to great cook! I also like simple recipes with not too many ingredients & no complexity to it at all!
So here we go with two potato recipes & one apple recipe......
Cinnamon ginger sweet potatoes from Oxygen Women's Fitness- Ready in 20 minutes Makes 6 servings
• 1 cup low-sodium chicken broth
• 1/2 onion, diced
• 1 1/2 tbsp ginger, minced
• 4 cloves garlic, chopped
• 6 medium sweet potatoes, peeled
and cut into cubes
• 1 tsp cinnamon
• 1 tbsp honey
• Sea salt and pepper to taste
1. Heat a large skillet on medium high heat, add 1 tbsp of broth and sauté onions until soft.
2. Add ginger and garlic and mix together with onions.
3. Add sweet potatoes, cinnamon, honey and remaining broth. Stir and let simmer until potatoes are tender (about 15 minutes).
4. Season with salt and pepper. Serve hot.
NUTRIENTS PER SERVING:
Calories: 141, Total Fats: 0 g, Saturated Fat: 0 g, Trans Fat: 0 g, Cholesterol: 0 mg, Sodium: 54 mg, Total Carbohydrates: 32 g, Dietary Fiber: 4 g, Sugars: 12 g, Protein: 3 g, Iron: 1 mg
Potato chips in the Microwave - 1 Weight Watcher Point - from Girl, Get Strong

When I first heard about these chips, I thought ewww….they must come out so soggy! But that is simply not the case, these chips come out so crispy and delicious, it was such a pleasant surprise! If you use one small potato and do not use any oil, they are worth 1 point per serving. They are also on the Filling Food List, but you can only have one potato per day.
Ingredients:
1 potato scrubbed and washed, leave the skin on for extra fiber.
Directions:
- Slice the potato really thin. I used the side of my cheese grater and they came out paper thin.
- Spray them with oil spray(season with preferred flavoring)
- Spread on a single layer on parchment paper
- Place them in the microwave on high heat for about 5 minutes until start turning brown. Depending on your microwave, you may need more time. Keep a close eye on them.
YUMMY! If you are wanting to stop your crunchy, salt craving these little guys will do it! As to what to add to them, that is up to you. I dipped mine in vinegar first before popping them in the microwave and then added salt. Another suggestion is to add popcorn flavoring salt. They are even hard enough to be dipped into salsa….so good my mouth is watering..time to make some more!
Tart, firm apples such as Granny Smiths work well in this recipe. Apple chips are great as an eat-from-the-bowl snack or as a garnish for cider-based drinks. (Make a cut in the side of the apple slice before you bake so that you can attach it to the side of a glass.)
1 cup sugar
Heat oven to 200 degrees.
In a large bowl, combine sugar and spices. Slice apples horizontally with a mandoline or sharp knife, very thinly (1/8 inch thick). Remove and discard seeds. Toss apple slices gently but thoroughly in the spice mix; coat well.
Arrange in a single layers on rimmed baking sheets lined with parchment or Silpat. Bake about 2 hours, turning every 30 minutes. Cool on wire racks.
From Jody: Now you can substitute sugar with something else like Splenda if you use that or another sweetener of your choice & even change up the spices.. maybe use pumpkin pie spice! In fact with any of these recipes, change them up to make them your own or to suit your own taste buds!







Those recipes are amazing. I got some sweet potatoes from the farmer's market, not realizing they were too small to bake! I was wondering what to do with them. I'm going to try that sweet potato recipe.
As far as cutting the potatoes super thin - you almost need a mandolin to do it. I don't have one, but maybe you do. Other than that, a super sharp knife and a steady hand?!

Thank for posting our ww chip recipe! As for slicing them thin, I just used the part of the cheese grater that is for slices...i think most cheese graders have them! They are really good!

Sian, thx for the recipe! I have to buy a cheese grater or something else. I don't eat cheese & I am not a good cook so I don't have a lot of utensils in my house!

Apple chips look good. Apple slices on pizza is also off the hook... try that one.
They have to be fairly dry but they are much better than pineapples IMO.
And I have to flame you on something Jody. Mainly cuz I know you can take it. I don't see any post categories. wtf... Bad!
You share a crap load of recipes, some of which I wana try/modify, but I can't find em all in the future! It's like trying to find my workout gloves in my room... quite the task all on it's own.
You really need to start a recipe category

FJ, I hear you on the categories & I need to learn this stuff better. I want to do that & tags & the rest of the stuff that you all do. Understanding computers is just not my thing. I can do a lot of the basics but it is the "fancy stuff" that gets me. I am more a people & face to face person. My brain does not work computer stuff!
