Dark Chocolate Truffle Makeover
Well, we had a crazy day Thursday at Disneyland & I am still recouping!!! Was trying to do some catch up yesterday & the bod is still recouping as I did my workout before we went to Disneyland. A very long day for me! It was lots of fun with the grandkids in town & will post a couple pics at a later date. BUT, for now, how about a recipe makeover & treat for those that like chocolate & truffles. Now, I have not made these but I sure would like to hear from anyone that does make them so we can all know how they taste! If you can stop at one for a daily treat, it might work for you! Here it is!!!!Healthy Dark Chocolate Truffles
Chocolate truffles are generally deemed sinful thanks to thepreponderance of cream and butter that is part of their charm. But itdoesn’t have to be that way! This version relies on raw cashews anddates for a rich and healthy base that is packed with nutrients ratherthan high-calorie dairy.
1 bag or bar of dark chocolate (12 oz)
1 2/3 cups raw cashews
8 oz dates, finely chopped
1/4 teaspoon sea salt
Zest of 1/2 of an orange
1. Melt chocolate in double boiler until just melted.
2. Meanwhile, blend 2/3 cups cashews with 2/3 cups water in blender on high for 30 seconds. Chop remaining cashews and set aside.
3. Fold together melted chocolate, cashew mixture, dates, sea salt, and orange zest.
4. Refrigerate until firm, approximately 45 minutes. Roll 3/4-inch balls in hands and then in chopped cashews. Refrigerate until ready to serve. (Note: Truffles will keep in freezer up to 1 month.)
Makes 24 truffles
Nutrition info per truffle: 105 calories; 5 g fat; 3 g saturated fat; 1 mg cholesterol; 1 g protein; 15 g carbohydrates; 1.5 g fiber; 5 mg sodium.







Well, I'm not really and fan of dark chocolate, but the mere mentions of "cream" and "butter" sure do make me wanna rethink that!

I may actually try these! Hubby really enjoys one small piece of chocolate with his lunch that I pack, and sometimes I make a coconut chocolate kind of truffle candy. If I ever really crave chocolate, I can usually stick to one piece. Potato chips would be a different story.

Yummy Yummy!! I love truffles, but I am not able to eat one, I would eat them all. Chocolate is a major weakness for me, I'd have to lock them up!
