Brownie Recipe Makeover & Happy Bday!

First and foremost, HAPPY BIRTHDAY to my stepdaughter Jennifer!!!
Her Birthday is today. Jen is the bootcamp stepdaughter. Also, wonderful news .... she is engaged! That happened about 3 weeks ago but just getting to tell you now. Her fiancé even called her Dad first to ask his permission for her hand in marriage before asking her. Isn't that romantic! He asked Jennifer to marry him on a trip to San Francisco & above is a picture of the happy couple!

OK, here is a quick recipe makeover for brownies  from Joy Bauer of The Today Show. I have not tried them but they sure look easy to make & probably easy to substitute your own creations to them!

INGREDIENTS

1 package Pillsbury Traditional Fudge brownie mix (or any brand)
1/2 cup nonfat plain yogurt (roughly one 6oz. container)
1/4 cup water
1 egg white
1 tsp vanilla extract

DIRECTIONS

Preheat oven to 350.  In large bowl, blend together yogurt, water, beaten egg white, and vanilla.  Add in dry brownie mix and stir until combined, about 50 strokes.  Spread in 13x9” baking dish greased with nonstick cooking spray.  Follow package directions for baking instructions, checking brownies 5 minutes early as baking time may decrease. Cool completely before cutting and serving.

Have a great Sunday!
