Healthy Muffin Recipe

Who doesn't like muffins!!! I do & especially the tops! Those familiar with Vitatops & Vitamuffins might be too familiar with them!!! Well, I saw a recipe on my Oxygen Women's Fitness "e" letter that I thought I would share with you. It is for a Strawberry Orange Muffin. The make-up of ingredients are good along with the nutritional breakdown which is less than 200 calories, 5g of fat, 3g of fiber and 5g of protein. For me, I might want to tweak the ingredients to add in some of my protein powder to up that protein content & maybe even throw in some ground flax. I might even experiment with reducing the oil a bit but that is just me. They really are fine just the way the recipe calls for them. They are also freezable!!! I just wanted to remind you also of my homemade protein bars from a recipe in Clean Eating magazine. You can see the full recipe on my post of February 18, 2009. I wanted to add that I bought some of those mini loaf pans & are now making them in those pans instead of using the tin foil or the cupcake tin. They are really too big for the amount you put in but that is OK. Just measure out the amount equally among the mini loaf tins for 6 bars (that is what the recipe makes) & as they bake, they spread out perfectly & make a nice little protein bar! Again, I also mix it up with different nuts in them & I like to add ground flax as well.
