Breakfast Recipe Makeovers

We all have heard that breakfast is the most important meal of the day. You need to fuel your body and mind for the day. Have you ever tried to concentrate on some hard work project or other project on an empty stomach? It has been proven that we perform better when we have eaten a well balanced meal. For breakfast, you should aim for a meal with protein, carbs & healthy fat. Don't eat a donut or even just an apple & run out the door. Fuel your body for the day!Saying that, I do have a couple "indulgent" recipes to share with you.
1. This Baked Apple-Cinnamon French Toast from the Care2 site takes some time to prepare so you need to plan for that. You might want to save this for a weekend or prepare it Friday eve and refrigerate overnight per the instructions. It does have a great ingredient make-up though which adds protein to the mix. The calorie count is only 183 calories so if you prefer more protein at breakfast like me, you can add in some non-fat yogurt or some egg whites on the side! I tell you, this one looks like a yummy winner to me!!!!
2. From Diet Detective, here is a recipe for Applesauce Pumpkin Muffins. These sound really good to me at only 135 calories each. Store bought muffins can add up to 500+ calories & tons of fat too so these are a great alternative & you can take them with you if necessary. On top of that, pumpkin is a very healthy addition to your diet. The protein content is low so once again, you may want to have some non or low fat yogurt (I love greek yogurt) or eggs/egg whites or another form of your favorite protein with your muffin.
